Following the addition of assorted salts, the gelatinization and retrogradation properties of seven wheat flours presenting diverse starch structures were investigated. The presence of hydrophilic quaternary ammonium groups on the carrageenan backbone directly impacts interaction enhancement in drug delivery systems, culminating in the creation of active surfaces. Analysis using statistical methods showed that, within the investigated range, only the molar ratio of the cationizing agent to the repeating disaccharide unit of carrageenan had a significant consequence. The optimized parameters, achieved by using 0.086 grams of sodium hydroxide and a 683 glycidyltrimethylammonium/disaccharide repeating unit, demonstrated a 6547% degree of substitution and 403% solubility. Numerous health claims related to pectins stem from their ability to undergo fermentation within the large intestine, however, detailed investigations correlating their structure with this fermentation process have not been reported previously. Pectin fermentation kinetics, focusing on the structural diversity of pectic polymers, were examined in this study. Consequently, six commercially produced pectins derived from citrus, apples, and sugar beets underwent chemical characterization and in vitro fermentation using human fecal matter over various time points (0 hours, 4 hours, 24 hours, and 48 hours). Examining the structures of intermediate cleavage products from various pectins revealed variations in fermentation speed and/or rate, but the sequential fermentation of distinct pectic structural elements remained uniform across all pectin types. First, the neutral side chains of rhamnogalacturonan type I were fermented (0 to 4 hours). Then, the homogalacturonan units were fermented (0 to 24 hours), and lastly, the backbone of rhamnogalacturonan type I was fermented (4 to 48 hours). Fermentation of diverse pectic structural units may take place within different segments of the colon, potentially impacting their nutritional composition. Regarding the influence of pectic subunits on the production of different short-chain fatty acids, namely acetate, propionate, and butyrate, and their effect on the microbiota, no temporal link was established. Thermal aging at temperatures of 140°C or greater magnified the material's yellow-orange fluorescence, leading to its luminescence response under excitation by a 785 nm near-infrared laser.
